Chapter 1: Scope and Progress on Anthocyanins
Abstract In this chapter, the extraction, isolation and purification, structural identification, physicochemical properties, and stability of anthocyanins were briefly described. Anthocyanins have physiological functions such as antioxidant effect, auxiliary hypolipidemic effect, auxiliary hypoglycemic effect, anti-mutation and anti-tumor effect, and relieving visual fatigue. The contents of this book are summarized and introduced in this chapter.
